Necessary products

  • 200 grams of butter
  • 170 grams of sugar

Let's start cooking

  1. Coat the cake pan with butter and lightly sprinkle with flour. Pour the excess flour.
  2. Sift flour into a bowl, add baking powder, soda, cinnamon and salt. We mix everything.
  3. In another bowl, combine softened butter, sugar and vanillin. Beat everything with a mixer for 5 minutes. Then add eggs one at a time. After each addition, beat the mixture with a mixer. After adding the last egg, beat the mixture for another 3 minutes.
  4. Add half of the flour mixture to the resulting mass, mix. Then add the rest and mix again.
  5. Peel the apples and grate them. We transfer them to the dough. Add raisins and lemon zest there. Mix everything well.
  6. Transfer the finished dough to the mold.

Ingredients:

  1. Flour - 300 g
  2. Honey - 150 g
  3. Eggs - 2 pcs.
  4. Kefir * - 100 g.
  5. Apple - 1 pc.
  6. Raisins - 20 g
  7. Butter - 100 g
  8. Soda - 1 teaspoon
  9. A pinch of salt
  10. Nutmeg - 0.5 teaspoon
  11. Ginger - 0.5 teaspoon
  12. Lemon juice - 1 tablespoon
  13. Sugar - 30 g - 6 teaspoons

* If the dough is too thick, dilute it a little (50-100 ml) with kefir or water, juice, milk. Only add the liquid gradually so as not to overdo it.

Preparation:

1. Raisins, if dry, prepare in advance. Soak very hard raisins overnight, you can use rum, brandy or liqueur instead of water. Soft raisins just need to be washed well, dried, and blotted with a paper towel. Roll in flour.

2. Melt butter with honey and sugar in a water bath. Cool until warm.

3. Add spices to flour, soda (do not extinguish!), Mix well with a whisk.

4. Combine kefir with eggs, mix.

5. Knead the dough: add a little flour to the melted honey and butter, mix, then add the eggs with kefir, then the rest of the flour. Knead the dough to the consistency of thick sour cream. It does not pour, but falls off the spoon.

If the dough is thicker, add 50-100 grams of kefir or water.

6. Wash the apples, remove the skin, cut into 4 pieces, cut the core. Cut into small cubes, pieces. Sprinkle with lemon juice, stir so that all pieces are moistened with juice. Dip lightly in flour; for this, 1 tablespoon of the total amount of flour will be enough.

7. Add apples and raisins to the dough, mix.

8. Put the dough into a mold. It should be about two-thirds full.

I have a silicone cake pan. It is too big because it is half full.

Bake in an oven preheated to 180 degrees for about 60 minutes. Check for readiness with a match or a wooden barbecue stick.

9. Serve cooled to tea, coffee. The cupcake is very tender and moderately sweet. If the sweetness is not enough, you can sprinkle the cake with powdered sugar or cover with icing, preferably white.

  • cream (15%) - 120 ml;
  • butter (butter) - 25 grams;
  • nuts (walnuts) - 70 grams.

Cooking:

  1. Mix sugar (150 grams) with vanilla and eggs. Then grind all products with a whisk.

  • butter - 130 grams;
  • boiled condensed milk - 1 can.

Technology:

  1. Add eggs, sugar to soft butter and beat well.
  2. Then pour milk into the mixture and stir.
  3. Pour flour into the milk mass, add soda and stir to make the composition homogeneous.
  4. Take silicone molds and put a tablespoon of dough in them. After that, pour 20 grams of condensed milk and cover the top with dough again.
  5. Heat the oven to 185 degrees, put the tins with dessert in them and bake for 20 minutes.

Let's start by making the applesauce for the muffins. If you do not have time at all or are simply overwhelmed by laziness-mother, then you can choose the path of least resistance and buy ready-made applesauce in the store. It can usually be found where food for children is sold. But I prefer muffins with the mashed potatoes that are made at home. It has a richer taste, such a puree turns out to be thick and aromatic.
Cut the apples, without peeling, into halves and remove the core, and then cut each half into three or four more parts. Place the chopped apples in a glass or ceramic bowl and microwave for about 10 minutes.
Apples can also be baked in the oven. Choose the method that is closer to you.


Let the apples cool and scoop out the pulp with a spoon or fork, then mash it.
The apples are very soft, so you can do well with a fork. I made 450 grams of applesauce from this number of apples. For baking muffins, we need 250 gr. The rest of the applesauce can be put in a container or jar and placed in the refrigerator, it will be perfectly stored there for a couple of days.


In the meantime, let's get down to making the cupcakes directly.
Rinse the raisins thoroughly under running hot water and dry well.
Instead of raisins, you can use any dried fruits (cranberries, cherries, dried apricots, prunes), candied fruits, nuts or even poppy seeds. Only the poppy should first be poured with hot water, left for 5-10 minutes, and then drained.


Mix together flour, raisins, cinnamon, baking soda and sugar.


Mix the applesauce well with the vegetable oil.


Combine the flour mixture and the puree and butter mixture. Mix everything well.
If the dough seems very thick to you, you can add a couple of tablespoons of apple juice.


Line the cake pan with paper muffin capsules or brush thoroughly with butter and flour.
I prefer paper capsules, so I'm sure that my cupcakes can then be easily removed from the mold. I usually use two paper capsules for each cupcake.

Put 1-1.5 tablespoons in the tins. test. Try to fill out the form 2/3 - the dough is guaranteed not to crawl out of the molds.
Preheat the oven to 180 ° C. Bake the muffins for 30-40 minutes.

Focusing on the cooking time on your own oven, start checking the readiness of the muffins in half an hour - the stick should come out dry, without lumps of dough.
