Grate cold butter on a coarse grater. Therefore, you should not take it out of the refrigerator ahead of time.

Add butter to the dough, break 1 egg into it and knead until the dough is elastic, soft and does not stick to your hands. Let's form a ball. Wrap in cling film and put in the refrigerator for an hour.

After the cherries have defrosted from the plate, it is necessary to drain the juice that appears and lightly squeeze the cherries.

Prepare brown sugar by pouring it into a flat plate.

After an hour, take out the dough and roll it out to a thickness of 0.3-0.5 cm. If the dough sticks to the rolling pin, you can use parchment paper, rolling the dough between two sheets. Cut out the cookie dough into a round shape with sharp edges. I used a 5.5 cm diameter mold.

Place 3-4 squeezed cherries on one circle, pressing them a little.

Dip the second circle on one side in brown sugar. Here, many may have a question - is it possible to replace brown sugar with regular white sugar? I would not recommend doing this, because... white sugar can simply melt and flow, but brown sugar melts worse than white sugar and will have its original appearance after baking. Plus, I think brown sugar looks better on chocolate chip cookies.

Then we cover the circle with the cherry with it (put sugar on top) and pinch the edges with a fork.

Using a toothpick, make three small holes on the surface of the cookies to allow excess moisture to escape during baking. Then transfer the formed cookies onto a baking sheet lined with parchment paper. Better yet, make cookies directly on this paper.
