Today for you is my recipe for a simple dietary, at the same time, delicious and tender baked goods from cottage cheese. The “roses” turned out to be yellow because the dough contains corn flour. But you can make them, if you wish, pink by adding beet juice to the dough. Above dietary buns can be sprinkled with cinnamon or sesame seeds.

Diet buns "Yellow roses" recipe

Ingredients:

  • Wheat flour 1 grade - 1 glass
  • Corn flour - 1 glass or slightly less
  • Cottage cheese- 250 g
  • Honey - 2 tablespoons
  • Egg - 1pc.
  • Syrup from any jam - for greasing the dough
  • Butter (softened) - 70 g
  • Baking powder - 1 tsp.
  • Salt - a pinch

My way of cooking:

1. Mix two types of flour with salt, baking powder
2. Add softened butter and a mixture of cottage cheese, honey, and eggs
3. Knead a soft dough of such consistency that it does not stick to your hands.


5. Lubricate its surface with syrup (I took the syrup from) so that the layers are easily separated from each other

I love baked goods, especially soft, home-like, porous buns are my weakness. When oatmeal gets boring for breakfast, I make healthy super-soft buns.

I bake such rolls - the crumpets are unsweetened, so they are universal - you can make both sweet and savory additions. Such a bun will make a great burger.

On a note! In this case, I'm using a mixture of healthy flours — corn, rice, oatmeal, bran flour, fiber, and whole grains. But you can choose one of them. Corn buns, oat buns, and whole grain buns are good options. Rice will be more high-calorie, but even more porous and airy. I prefer to combine several varieties, as each contains minerals and health benefits that may not be found in other flours.

Bun ingredients

  • Soft cottage cheese 0.1% - 200 gr;
  • Egg - 1 pc;
  • Corn starch - 1.5 tsp;
  • A mixture of healthy flour (or some one of them) - 10 tablespoons;
  • Dry yeast - ½ tsp;
  • Baking soda - 1 tsp;
  • Salt - 1/3 tsp;
  • Warm water (for breeding yeast) - 3 tablespoons;
  • Psyllium * - 1 tsp

* Psyllium is optional. It will just thicken the mass a little, and the buns will be easier to form into balls. If you don't have psyllium, you can simply add an extra scoop of flour.

Preparation

  1. Fill the yeast with warm water. It may seem that there is not enough water, but we need a viscous mass. The instant yeast will dissolve rather quickly and the mixture will look like thick sour cream.
  2. While the yeast is dissolving, mix the egg with cottage cheese, soda, salt.
  3. Mix flour with cornstarch, psyllium.
  4. Thanks to the added soda, the curd mass will become fluffy, porous. Add diluted yeast, flour mixture to it and knead the dough. It will turn out to be thick, but sticky. The dough will stick to your hands, but this will not hurt to mold the buns later.
  5. Leave the mass in a warm place to rest for 15 minutes and swell a little. In the meantime, preheat the oven to 180 ° -200 ° C.
  6. You need to form buns with wet hands, the dough sticks strongly to dry ones. It is advisable to bake on a non-stick surface, otherwise the buns will stick, because they do not contain oil. I baked in a large silicone mold.

Baking time is about 20 minutes. The buns will brown and rise. They have a very rich grain taste, cereal thanks to flour. At the same time, the texture is soft, lush. When pressed, the bun squeezes appetizingly and jumps right into the mouth by itself. I got 7 rolls of 30-40 gr. One baked bun contains about 110 kcal.

  • Curd cream (soft cottage cheese + sugar-free jam / fruit puree / cinnamon, vanillin + sahzam);

If you are on a diet, this does not mean at all that your food should be bland and tasteless. Even buns can be eaten, but the main thing is that they do not include rich foods, which, in fact, contribute to gaining excess weight. These dietary buns, as they say - are it! The ingredients for them are used the most that neither is dietary, and buns at the same time turn out to be very lush, aromatic and tasty. They go well with a wide variety of dessert drinks, and can also be used to make a variety of sandwiches and hamburgers.

Ingredient List

  • wheat flour - 300 g
  • whole grain flour- 200 g
  • salt - 1.5 tsp
  • sugar - 1.5 tbsp. spoons
  • vegetable oil- 2 tbsp. spoons
  • dry yeast - 2 tsp
  • warm water - 330 ml

Cooking method

Dissolve the yeast in warm water with sugar and leave for 10-20 minutes, until a frothy cap appears. Then add salt and pour in vegetable oil. Add whole grain flour and stir. Then pour wheat flour through a fine sieve and knead to a homogeneous dough. Place the dough in a warm place for 1 hour so that it rises twice.

Transfer the risen dough to the table, sprinkled with a thin layer of flour and knead well. Divide into 11 round balls. Then crush each ball a little into a cake, then wrap the edges of the cakes to the center and press firmly with your fingers, while turning the dough. Put the resulting balls on the table with the seam down and roll on the table.

Grease a baking sheet and sprinkle with a little flour. Arrange the shaped buns and lay a little on top of each bun. Cover the buns first with plastic wrap and then with a thin towel. Leave to rise for 40 minutes. Then remove the film with a towel, and send the buns to an oven heated to 200 degrees. Bake for about 15-20 minutes, until golden brown. If you like crisp, then after baking you just need to let the buns cool down, and if you like extremely soft buns, then grease their surface with cold water.

It is worth trying the gourmet low-calorie pastries made by our grandmothers. Her filling is sorrel or rhubarb, finely chopped and stewed in boiling water, mixed with a small amount of sugar. The same effect can be achieved by using a banana or ground flax seeds, which must be mixed with water, instead of eggs. Half a banana or one tablespoon of chopped flax equals one chicken egg. Solving the sugar issue

White sugar used in baked goods can be completely replaced with other products: molasses, honey or maple syrup. You can also use jam. Cane or brown sugar is a good alternative to white sugar.

In principle, reducing the amount of granulated sugar does not particularly affect the usual rich taste of rich baked goods. Therefore, in some cases, it is quite acceptable to reduce the amount of sugar required by the recipe by exactly half.

Substitution of fats

To prepare low-calorie and healthy pastries, it is more expedient to replace butter or margarine with low-fat cottage cheese.
